Method
Build the Amaro Serve
Chill glass
Place a rocks glass in the freezer or fill it with ice water to chill while you prepare the cocktail.
Combine liquid ingredients
In a mixing glass or shaker filled halfway with ice, add 4 oz Cynar, 1 oz sweet vermouth, 0.5 oz dry vermouth, 0.25 oz simple syrup, and 2 dashes (about 2 tsp) orange bitters.
Stir to chill and dilute
Stir the mixture with a bar spoon for 20–30 seconds until well chilled and slightly diluted (about 15–20% dilution is typical for stirred spirit-forward drinks). This softens the bitterness and integrates the vermouths and syrup.
Prepare glass
Discard ice water from the chilled rocks glass if used, and add one large ice cube (or fill with fresh ice).
Strain
Strain the stirred mixture into the prepared rocks glass over the large ice cube.
Express and garnish
Hold the orange peel over the drink, give it a firm twist to express oils over the surface, then rub the peel's rim along the glass and drop it into the drink as garnish.
Serve
Serve immediately. Sip slowly to appreciate the herbal-artichoke bitterness balanced by the vermouth and touch of sweetness.
