Warm the cup by rinsing it with hot water or placing it on an active espresso machine cup warmer. Preheat the portafilter and group head by running a blank shot for a few seconds.

If using an espresso machine with a steam wand, purge the wand briefly to remove condensation. Have a milk pitcher (150–300 ml capacity), tamper, scale, and thermometer (optional) ready.

Dose & tamp

Weigh 18 g of freshly ground espresso into a clean, level portafilter basket. Distribute the grounds evenly and tamp with 30 lbs (≈13.6 kg) of pressure to create a flat, even puck.

Brew

Lock the portafilter in the group head and start extraction. Aim for a 1:2 brew ratio (≈36 ml espresso) in about 25–30 seconds. Adjust grind size or dose if extraction time is significantly outside this range.

If you prefer sweeter cappuccino, add up to 1 tsp sugar or 1 tsp simple syrup to the cup before brewing so it dissolves into the hot espresso.

Steaming the milk

Pour 150 ml whole milk into the chilled milk pitcher up to the widest point (about one-third full). This yields roughly equal parts espresso, steamed milk, and milk foam for a 150–180 ml cappuccino.

Purge & position wand

Purge the steam wand for 1–2 seconds to clear condensation, then insert the tip just below the milk surface at a slight angle. Keep the pitcher tilted to create a whirlpool.

Create microfoam

Turn on steam to full and lower the pitcher slightly so the wand tip sits just beneath the surface to introduce air for the first 3–6 seconds (you should hear a gentle 'paper tearing' or faint hissing sound). Then raise the pitcher so the tip is submerged to continue heating and create a smooth whirlpool that integrates air into microfoam.

Heat milk to 60–65°C (140–149°F). If you don't have a thermometer, stop when the pitcher becomes too hot to touch for more than a couple of seconds (about 55–65°C). Total steaming time is typically 20–40 seconds depending on equipment.

Wipe and purge the steam wand immediately after steaming to remove milk residue. Swirl the pitcher and tap it lightly on the counter, then knock the pitcher gently on the counter to pop any large bubbles. Swirl again to polish the microfoam into a glossy, pourable texture.

Assembling & finishing

Pour the freshly pulled espresso into the warmed cup if you brewed into a separate container, or use the cup you brewed into. Allow crema to sit briefly (5–10 seconds).

Hold the pitcher close to the cup and pour the milk steadily into the center of the espresso. Start with a higher pour to let steamed milk integrate, then lower the pitcher and pour more slowly to allow the foam to sit on top and form the classic cappuccino ratio (about 1/3 espresso, 1/3 steamed milk, 1/3 foam). If desired, finish with a simple latte-art pattern by controlling flow and slight wiggles of the pitcher.

Lightly dust the top with cocoa powder or ground cinnamon (about 1 tsp) if desired. Serve immediately while hot.
