Battered Fried Oreos

Prepare oil

Pour the vegetable oil into a deep, heavy-bottomed pot or deep fryer to a depth of about 2–3 inches (roughly 1–1.5 cups in a small pot). Heat the oil to 350°F (175°C). If you don't have a thermometer, test with a small drop of batter: it should sizzle and brown in about 45–60 seconds.

Make the batter

In a medium bowl whisk together the all-purpose flour, cornstarch, granulated sugar, baking powder, and salt. In a separate small bowl beat the egg lightly with the milk and vanilla. Combine the wet mixture into the dry ingredients and stir until mostly smooth. Gradually whisk in the cold sparkling water (or club soda) until the batter reaches a thick but pourable consistency—similar to pancake batter coating the back of a spoon. Adjust with a splash more water or a spoonful more flour if necessary. Chill batter in fridge for 10 minutes while oil heats.

Batter the cookies

Working in small batches (4–6 cookies at a time to avoid crowding), hold each Oreo with a fork or skewer and dip fully into the batter, allowing excess to drip off. You can also drop the dipped cookie directly from the fork into the oil.

Fry until golden

Carefully lower battered Oreos into the preheated oil. Fry 2–3 minutes, turning if needed, until the batter is puffed and golden brown. Do not overcrowd the pot. Use a slotted spoon to transfer fried Oreos to a paper-towel-lined tray to drain. If frying multiple batches, keep the first batches warm on a baking sheet in a 200°F (95°C) oven while finishing the rest.

Finish

Allow fried Oreos to rest 1–2 minutes (they will be extremely hot inside). Optionally dust lightly with confectioners' sugar.

Assembly & Garnish

Place one or two warm battered Oreos on each dessert plate (or put 3–4 if serving family-style). Add one scoop of vanilla bean ice cream beside the cookies (2 scoops for a larger serving).

Warm the chocolate sauce slightly if cold so it will drizzle — either in a small saucepan over low heat or 10–15 seconds in the microwave, stirring to smooth.

Drizzle about 1–2 tablespoons of warm chocolate sauce over the ice cream and fried Oreos per serving. Top each plate with roughly 2 tablespoons of whipped cream (or use a generous dollop).

If desired, finish with a tiny pinch of flaky sea salt over the chocolate and ice cream to enhance contrast and a light dusting of confectioners' sugar over the Oreos.

Serve immediately while the Oreos are warm and the ice cream is cold.
