Method
Whipped Ricotta

Prepare the Ricotta
In a mixing bowl, combine the ricotta cheese and heavy cream.

Whip the Mixture
Using an electric mixer, whip the ricotta and heavy cream together on medium speed until light and fluffy, about 3-5 minutes.

Season
Add salt, freshly cracked black pepper, and lemon zest to the mixture. Whip for an additional 1-2 minutes to combine.
Honey Drizzle

Drizzle Honey
Once the ricotta is whipped, drizzle honey over the top to taste. Serve immediately or refrigerate until serving.
House-made Crackers

Prepare the Dough
In a large bowl, combine all-purpose flour, olive oil, water, salt, and dried herbs. Mix until a dough forms.

Knead the Dough
Turn the dough out onto a floured surface and knead for about 5 minutes until smooth.

Roll Out the Dough
Divide the dough into two pieces. Roll out each piece very thinly (about 1/8 inch thick) on a floured surface.

Cut and Bake
Cut into desired shapes and place on a baking sheet. Bake in a preheated oven at 400°F (200°C) for 10-12 minutes or until golden.

Cool and Serve
Remove the crackers from the oven and let cool. Serve alongside the whipped ricotta.
