Salad Preparation

    Boil the Potatoes

    In a pot of salted water, add the fingerling potatoes and bring to a boil. Cook until tender, about 15-20 minutes, then drain and let cool.

    Prepare the Snap Peas

    Blanch the snap peas in boiling water for 1-2 minutes, then transfer them to an ice bath to stop the cooking process. Drain and set aside.

    Prepare the Hard-Boiled Eggs

    Place eggs in a pot and cover with cold water. Bring to a boil, then cover and remove from heat. Let sit for 10-12 minutes. Drain, cool in cold water, peel, and slice.

    In a large serving bowl, combine mixed greens, cooled potatoes (halved), snap peas, cherry tomatoes (halved), sliced hard-boiled eggs, black olives, and tuna.

Dressing Preparation

    In a blender or food processor, combine Greek yogurt, fresh parsley, lemon juice, minced garlic, olive oil, salt, and black pepper. Blend until smooth and creamy.
