Prepare the Oatmeal

    Cooking the Oats

    In a medium saucepan, bring 4 cups of water to a boil. Add 1 cup of steel cut oats and 1 tsp of salt. Stir well and reduce heat to low. Cover and simmer for about 20-30 minutes, stirring occasionally, until the oats are tender and have absorbed most of the water.

Make the Spiced Apple Butter

    Cooking the Apples

    In a separate saucepan, combine 2 cups of diced apples, 1 cup of brown sugar, 1 tsp of ground cinnamon, 1 tsp of ground nutmeg, and 1 tbs of lemon juice. Cook over medium heat, stirring occasionally, for about 15-20 minutes, or until the apples are soft and the mixture has thickened slightly. Remove from heat and let cool.

Prepare Candied Walnuts

    Candying the Walnuts

    In a skillet over medium heat, melt 2 tbs of butter. Add 1 cup of walnuts, 1 cup of granulated sugar, and 1 tsp of cinnamon. Stir constantly for about 5-7 minutes until the sugar has melted and turned into a caramel-like coating. Spread the candied walnuts on a piece of parchment paper to cool.

Assemble the Oatmeal Bowl

    Serving the Oatmeal

    Once the oats are cooked, spoon them into bowls. Top each bowl with a generous spoonful of spiced apple butter, a handful of candied walnuts, and sliced fresh apples. Drizzle with milk or cream to taste.
