Prepare the Vegetables
Wash and slice the zucchini, red bell pepper, and yellow squash into even strips. Trim the ends of the asparagus.

Season the Vegetables
In a large bowl, combine the sliced vegetables with olive oil, salt, and black pepper. Toss until well coated.

Char the Vegetables
Preheat a grill or grill pan over medium-high heat. Grill the seasoned vegetables for about 3-5 minutes on each side, or until charred and tender. Remove from heat and set aside.
Cashew Dukkah

Toast the Nuts and Seeds
In a dry skillet over medium heat, toast the raw cashews, coriander seeds, cumin seeds, and sesame seeds separately until golden and fragrant, about 3-5 minutes for each.

Grind the Dukkah
Once cooled, combine the toasted cashews, coriander seeds, cumin seeds, sesame seeds, paprika, and salt in a food processor. Pulse until coarsely ground but not a fine powder.
