Shrub Base Preparation

    Prepare the Fruit

    Wash and chop the fresh fruit into small pieces. If using berries, you can leave them whole.

    Create the Shrub Base

    In a medium bowl, combine the chopped fruit and granulated sugar. Toss them together and let sit for about 30 minutes, allowing the fruit to macerate and release its juices.

    Add Vinegar

    After 30 minutes, add the apple cider vinegar to the fruit mixture. Stir well to combine all ingredients.

    Strain the Mixture

    Strain the mixture through a fine-mesh sieve into a clean jar or bottle, pressing down on the solids to extract as much liquid as possible. Discard the solids.

    Store the Shrub

    Seal the jar or bottle and refrigerate for at least 24 hours to let the flavors meld. The shrub base will keep for about 1 month in the refrigerator.

Soda Preparation

    Mix the Soda

    In a glass, add 1 to 2 tablespoons of the shrub base (adjust to your taste) and fill the glass with ice cubes.

    Add Club Soda

    Pour the club soda or sparkling water over the shrub base and ice. Stir gently to combine.

    Garnish and Serve

    Garnish with fresh mint leaves if desired. Serve immediately and enjoy your refreshing shrub soda!
