For the Scallops

For the Citrus Beurre Blanc

Method

Prepare the Scallops

  1. 1

    Pat Dry the Scallops

Use a paper towel to pat the sea scallops dry, ensuring they are free of moisture. This helps achieve a good sear.

  2. 2

    Season the Scallops

Sprinkle salt and black pepper evenly over both sides of the scallops.

Cook the Scallops

  1. 3

    Heat the Pan

In a large skillet, heat the olive oil over medium-high heat until it shimmers.

  2. 4

    Sear the Scallops

Carefully place the scallops in the skillet, making sure not to overcrowd. Sear for about 2-3 minutes on one side until a golden brown crust forms.

  3. 5

    Flip and Finish

Gently flip the scallops and add the unsalted butter. Cook for an additional 1-2 minutes, basting the scallops with the melted butter until cooked through.

  4. 6

    Remove from Heat

Transfer the scallops to a plate and cover loosely to keep warm.

Prepare the Citrus Beurre Blanc

  1. 7

    Sauté Shallots

In the same skillet used for the scallops, add the chopped shallots and sauté over medium heat until softened, about 2-3 minutes.

  2. 8

    Deglaze with Wine

Pour in the white wine, scraping up any browned bits from the bottom of the pan. Bring to a boil and reduce until the liquid is reduced to about half.

  3. 9

    Add Juices

Stir in the lemon juice and orange juice, continuing to reduce for another minute.

  4. 10

    Incorporate Butter

Reduce the heat to low and whisk in the unsalted butter, one piece at a time, until the sauce is smooth and creamy. Season with salt to taste.

Serve

  1. 11

    Plate the Dish

Arrange the seared scallops on plates and drizzle with the citrus beurre blanc.

  2. 12

    Garnish (Optional)

Garnish with fresh herbs like chives or parsley if desired.
