Bison Burger Patty

    Prepare the Patty Mix

    In a mixing bowl, combine the ground bison with salt, black pepper, garlic powder, and onion powder. Mix gently until just combined, being careful not to overwork the meat.

    Form the Patties

    Divide the bison mixture into two equal portions and shape them into burger patties. Make a small indentation in the center of each patty to prevent puffing during cooking.

    Cook the Patties

    Grill or pan-sear the patties over medium-high heat for about 4-5 minutes on each side, or until they reach an internal temperature of 160°F (71°C).

Garlic Aioli

    Make the Aioli

    In a bowl, combine the mayonnaise, minced garlic (crushed or finely chopped), lemon juice, and salt. Mix well until smooth and set aside.

Bacon Jam

    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove the bacon, leaving the drippings in the pan.

    Sauté the Onion

    Add the chopped onion to the skillet and cook until softened, about 5 minutes.

    Combine Ingredients

    Chop the cooked bacon and return it to the skillet with the onion. Add brown sugar, apple cider vinegar, and black pepper. Stir and cook for an additional 5-7 minutes until the mixture is thick and jam-like.

Burger Assembly

    Assemble the Burger

    Toast the burger buns lightly if desired. On the bottom half of each bun, place a lettuce leaf, followed by the cooked bison patty, a slice of smoked Gouda, a generous spoonful of bacon jam, and a dollop of garlic aioli. Top with tomato slices and the other half of the bun.
