Grain Preparation

    Cook the Ancient Grains

    In a medium saucepan, combine the ancient grains and water (or vegetable broth). Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes or until grains are tender and water is absorbed. Remove from heat and let sit covered for 5 minutes before fluffing with a fork.

    Roast the Beets

    Preheat the oven to 400°F (200°C). Toss the diced beets with olive oil, salt, and black pepper in a baking dish. Spread them out in a single layer and roast for 25-30 minutes or until tender and slightly charred, stirring halfway through.

Marinated Kale

    Marinate the Kale

    In a large bowl, combine chopped kale, olive oil, lemon juice, and salt. Massage the kale with your hands for about 2-3 minutes until it becomes tender and reduced in volume. Set aside to marinate.

Tahini Dressing

    In a small bowl, whisk together tahini, water, minced garlic, lemon juice, and salt until smooth. If the dressing is too thick, add more water, one teaspoon at a time, until desired consistency is reached.

    Cook the Protein (Optional)

    If adding protein, season the chicken breast, ahi tuna, or steak with salt and pepper. Cook the chicken in a skillet over medium heat for about 6-7 minutes on each side until cooked through. For ahi tuna, sear on high heat for 1-2 minutes per side for a rare finish. For steak, grill or pan-sear until desired doneness is achieved.
