House Tonic

    Prepare the Tonic Base

    In a medium saucepan, combine 2 cups of water with 1 tsp of quinine powder and 1 cup of sugar. Stir well to dissolve the sugar and quinine.

    Simmer the Mixture

    Bring the mixture to a gentle boil over medium heat, then reduce the heat and let it simmer for about 10 minutes.

    Add Lime Juice

    Remove the saucepan from heat and stir in 1 tbsp of lime juice. Allow to cool to room temperature.

    Combine with Seltzer

    In a glass, mix 1 part tonic base with 2 parts seltzer water. Adjust to taste.

    Garnish and Serve

    Add lime slices for garnish and serve immediately over ice.

House Ginger Ale

    Prepare the Ginger Syrup

    Peel and finely grate 1 cup of fresh ginger root. In a saucepan, combine the grated ginger with 2 cups of water and 3 tbsp of sugar.

    Boil and Steep

    Bring the mixture to a boil, then reduce heat and let it simmer for 15 minutes. Remove from heat and let it steep for another 10 minutes.

    Strain the Ginger Syrup

    Strain the ginger mixture through a fine mesh strainer into a bowl, discarding the solids.

    Mix with Seltzer

    In a glass, combine 1 part ginger syrup with 3 parts seltzer water and 1 tbsp of lime juice.

    Garnish and Serve

    Garnish with mint leaves and serve over ice for a refreshing drink.
