Pancake Batter

    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.

    In a separate bowl, mix the milk, egg, lemon zest, vanilla extract, and melted butter until well combined.

Blueberry Compote

    Cook Blueberry Compote

    In a medium saucepan, combine the fresh blueberries, granulated sugar, lemon juice, and water. Bring to a simmer over medium heat and cook for about 10 minutes, or until the blueberries have burst and the mixture has thickened slightly. Remove from heat and set aside.

Lemon Cream Cheese

    In a mixing bowl, blend the softened cream cheese, powdered sugar, lemon zest, and lemon juice until smooth and creamy. Set aside.

Cooking Pancakes
