Grilling the Chicken

    Marinate the Chicken

    In a bowl, combine the chicken thighs with salt, black pepper, and a drizzle of olive oil. Let the chicken marinate for at least 30 minutes.

    Grill the Chicken

    Preheat a grill or grill pan over medium-high heat. Grill the marinated chicken thighs for about 6-7 minutes per side, or until they reach an internal temperature of 75°C (165°F). Remove from the grill and let rest for a few minutes.

Preparing the Fennel and Herbs

    Slice the Fennel

    Remove the green fronds from the fennel bulb and slice the bulb thinly using a knife or mandoline. Set aside.

    Chop the Herbs

    Finely chop the mixed soft herbs (parsley, basil, and chives) and set aside.

Making the Dijon Aioli

    Combine Aioli Ingredients

    In a small bowl, combine mayonnaise, Dijon mustard, minced garlic, lemon juice, salt, and black pepper. Mix well until smooth and creamy.

Assembling the Sandwich

    Toast the Bread

    Lightly toast the slices of bread on the grill or in a toaster.

    Layer the Sandwich

    Spread a generous layer of Dijon aioli on each slice of toasted bread. On one slice, layer the grilled chicken, followed by the sliced fennel and chopped herbs. Top with the other slice of bread.

    Cut the sandwich in half and serve immediately, optionally garnished with additional herbs or a side of fries.
