Preparing the Salad Base

Trim and Halve Brussels Sprouts
Trim the ends of the Brussels sprouts and remove any discolored outer leaves. Cut each Brussels sprout in half lengthwise.

Prepare Apples
Core and slice the apples into thin wedges. You can leave the skin on for added texture and color.

Toss with Olive Oil and Seasoning
In a large bowl, combine the halved Brussels sprouts and apple slices. Drizzle with olive oil, and sprinkle with salt and black pepper. Toss to coat evenly.
Making the Caesar Dressing

Blend Dressing Ingredients
In a blender or food processor, combine Cacao di Roma, anchovy fillets (if using), minced garlic, lemon juice, Parmesan cheese, Worcestershire sauce, Dijon mustard, and water. Blend until smooth and creamy.

Adjust Consistency
If the dressing is too thick, add a little more water, one tablespoon at a time, until the desired consistency is reached.
Grilling the Salad

Preheat the Grill
Preheat your grill to medium-high heat.

Remove from Grill
Remove the grilled Brussels sprouts and apple slices from the grill and transfer them to a serving platter.
Assembling the Salad

Drizzle with Dressing
Drizzle the prepared Caesar dressing generously over the grilled Brussels sprouts and apple slices.

Serve the grilled Caesar salad warm, topped with additional grated Parmesan cheese if desired.
