    Prep the Vegetables

    Wash and chop the spinach and local greens. Peel and dice the potatoes into small cubes. Clean and slice the leeks thinly.

    Cook the Potatoes and Leeks

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and cook for about 5-7 minutes until they start to soften. Add the sliced leeks and continue to cook for another 5 minutes until both are tender.

    Add Spinach

    Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Season with salt and black pepper to taste.

    Prepare the Egg Mixture

    In a mixing bowl, whisk together the eggs, milk, and a pinch of salt and pepper until well combined.

    Combine and Cook

    Pour the egg mixture over the cooked vegetables in the skillet. Crumble the goat cheese on top. Cook over low heat for about 10-12 minutes, or until the edges start to set.

    Finish in the Oven

    Preheat your oven broiler. Once the edges of the frittata are set, transfer the skillet to the oven and broil for 3-5 minutes until the top is golden and puffed.

    Remove from the oven and let rest for a few minutes. Slice into wedges and serve warm, garnished with additional local greens if desired.
