Method

For the Biscuits

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Mix Dry Ingredients

In a large bowl, whisk together the all-purpose flour, baking powder, and salt.

  3. 3

    Cut in the Butter

Add the cold unsalted butter, cut into small cubes, to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

  4. 4

    Add Milk

Pour in the milk and stir until just combined. Do not overmix; the dough should be slightly sticky.

  5. 5

    Shape the Biscuits

Turn the dough onto a floured surface. Pat it into a rectangle about 1 inch thick. Cut out biscuits using a round cutter or a glass.

  6. 6

    Bake

Place the biscuits on a baking sheet lined with parchment paper and bake for 12-15 minutes until golden brown.

For the Sausage Gravy

  1. 7

    Cook the Sausage

In a large skillet, cook the ground sausage over medium heat until browned. Break it up into small pieces as it cooks.

  2. 8

    Make the Roux

Sprinkle the flour over the cooked sausage and stir until well combined. Cook for an additional minute to remove the raw flour taste.

  3. 9

    Add Milk

Slowly add the milk, stirring continuously to prevent lumps. Bring to a simmer and cook until the gravy thickens, about 5-7 minutes.

  4. 10

    Season

Season the gravy with salt, black pepper, garlic powder, and red pepper flakes. Stir well to combine and keep warm.

For the Sunny Side Up Eggs

  1. 11

    Heat the Pan

In a non-stick skillet, melt the butter over medium-low heat.

  2. 12

    Cook the Eggs

Crack the eggs into the skillet, being careful not to break the yolks. Cook until the whites are set but the yolks are still runny, about 3-4 minutes.

  3. 13

    Season

Season the eggs with salt and black pepper to taste.

To Serve

  1. 14

    Plate the Dish

Split the biscuits in half and place them on plates. Top with generous amounts of sausage gravy and a sunny side up egg. Drizzle with chili crisp as desired.
