    Prepare the Beef

    Remove the beef tenderloin from the refrigerator and let it come to room temperature for about 30 minutes.

    Season the Beef

    Rub the beef tenderloin with olive oil, minced garlic, chopped rosemary, salt, and black pepper until evenly coated.

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Sear the Beef

    In a large skillet over medium-high heat, sear the beef tenderloin for about 3-4 minutes on each side until browned.

    Roast the Beef

    Transfer the skillet to the preheated oven and roast for 20-25 minutes or until the internal temperature reaches 135°F (57°C) for medium-rare.

    Rest the Beef

    Remove the beef from the oven and let it rest for at least 10 minutes before slicing.

    Prepare the Potatoes

    Peel and cut the potatoes into quarters.

    Boil the Potatoes

    Place the potatoes in a large pot and cover with cold water. Bring to a boil and cook for 15-20 minutes or until tender.

    Once cooked, drain the potatoes and return them to the pot.

    Mash the Potatoes

    Add butter, milk, salt, and black pepper to the drained potatoes. Use a potato masher to mash until smooth and creamy.
