Measure and heat water

Measure 48 fl oz (about 1.4 liters) of filtered water for brewing. Pour 2 cups of filtered water into your kettle and bring it to a boil to preheat the brewer and rinse filter (if using a paper filter).

Preheat brewer and cup

If using a drip brewer or pour-over cone, place the paper filter in the basket/cone and pour the boiling water over it to rinse and warm the equipment. Discard the rinse water from the carafe or mug.

Grind and dose

Grind beans

Weigh or measure 0.5 cups (about 56–60 g) of medium-roast whole beans. Grind to a medium grind (similar to regular granulated sugar) suitable for drip coffee. Pike Place style is a balanced medium roast — aim for a slightly even, consistent grind.

Load grounds

Place the ground coffee in the rinsed filter or your coffee maker's basket, leveling the grounds so they are evenly distributed.

Brew

Start brewing

If using an automatic drip brewer: add the remaining ~46 fl oz of filtered water to the reservoir and start the brew cycle. If using pour-over: bring the remaining water to 200°F (about 30 seconds off boil). Begin by pouring a small amount of water (about twice the weight of the coffee, roughly 120–150 ml) over the grounds in a circular motion to saturate them and let bloom for 30–45 seconds.

Continue pour (pour-over) or complete cycle (drip)

For pour-over: continue pouring in slow, steady concentric circles, keeping the water level consistent and avoiding pouring directly on the filter, until you reach about 48 fl oz total (this will be done in multiple pours). Aim for a total brew time of 4–5 minutes. For drip brewer: allow the machine to finish the brew cycle, which should yield similar extraction and a total brew time around 4–6 minutes depending on machine.

Finish and serve

Rest and decant

When brewing is complete, allow the coffee to sit in the carafe for 1 minute to allow any remaining grounds to settle. Swirl gently to homogenize if necessary.

Serve

Pour into cups. Add sugar, milk/cream, or non-dairy creamer to taste if desired. Pike Place is typically served black to highlight balanced flavor, but offer additions per guest preference.
