Prepare glass

Chill a highball or Collins glass by filling it with ice and setting aside while you build the cocktail.

Build

Discard the ice from the serving glass. In a cocktail shaker, add light rum (2 oz), blood orange liqueur (1/2 oz), fresh blood orange juice (1 oz), fresh lime juice (1/2 oz), pineapple juice (1.5 oz), simple syrup (1/4 oz) and Angostura bitters (2 dashes).

Shake

Fill the shaker with ice (about 1 cup), secure the lid and shake vigorously for 10–12 seconds until well chilled and slightly diluted.

Strain

Fill the chilled serving glass with fresh ice. Double-strain the cocktail into the glass over the ice to remove any small ice chips and pulp.

Create sunset effect

Slowly pour the grenadine (1/2 oz) down the side of the glass or over the back of a spoon so it sinks to the bottom and gently rises to create a layered 'sunset' gradient.

Garnish and finish

Garnish with an orange wheel or blood orange slice and a maraschino cherry on a pick. If using, flame an orange peel over the drink and drop it in for aroma, or add a mint sprig for a fresh note.

Serve immediately with a stirring straw so the drinker may blend the layers as desired.

Flaming orange peel (optional)

Hold a strip of orange peel over the drink, skin side down. Lightly heat a bar spoon with a lighter, squeeze the peel to release oils through the flame toward the drink, then wipe the rim with the peel and drop it in. Exercise caution when working with flame.
