Madi Cake Crumble & Garnish

Prepare cake crumble

If your Madi cake is not already crumbed, break 3/4 cup (about 75 g) into small pieces. Toss the cake crumbs with 1 tsp melted butter in a small bowl so crumbs hold slightly together; spread on a baking sheet and toast under a broiler or in a 350°F (175°C) oven for 4–6 minutes until lightly golden and crisp. Allow to cool. Optionally sift 1 tsp powdered sugar over cooled crumbs.

Prep fruit garnish

Slice or halve seasonal fruit (peaches, berries, etc.) to yield 1/4 cup for the rim and topping. Keep a few small pieces reserved for the shake.

Glass Prep

Select two chilled milkshake glasses (about 12–14 oz / 360–420 ml). Pour 1 tablespoon cold water onto a small plate and 1 teaspoon granulated sugar onto another. Dip each glass rim into the water, then into the granulated sugar to create a thin sugared rim. Press a small piece of fruit into the rim so it adheres, if desired.

Blend the shake

In a blender combine 2 cups vanilla ice cream, 1 cup whole milk, 3/4 cup toasted Madi cake crumbs (reserve 1–2 tbsp for topping), 1/2 cup chopped seasonal fruit, 2 tablespoons Madi rum, 1 teaspoon light brown sugar, 1/2 teaspoon vanilla extract, and 1/4 teaspoon ground cinnamon. Add 1/2 cup ice if you prefer a thicker texture. Blend on medium-high until smooth but still slightly textured (10–20 seconds). Taste and adjust sweetness or rum: add up to 1 tablespoon more Madi rum or 1/2 teaspoon more sugar if needed. If mixture is too thick, add up to 2 tablespoons milk and pulse once more.

Ensure the shredded cake is incorporated but some small flecks remain for texture; do not over-blend to a uniformly smooth liquid — the goal is a creamy shake with cake bits.

Assembly & Serve

Divide the shake evenly between the prepared glasses.

Top each shake with a generous dollop (about 1/4 cup) of whipped cream. Sprinkle the reserved 1–2 tablespoons of toasted Madi cake crumbs over the whipped cream. Add a few pieces of the reserved seasonal fruit on top.

Finish with a light grating of fresh nutmeg (to taste) over the whipped cream and serve immediately with a wide straw and a long spoon.
