Burger Patties & Seasoning

Mix and form patties

Place the ground beef in a large bowl. Sprinkle kosher salt, black pepper, garlic powder and Worcestershire sauce over the meat. Gently combine using your hands or a spatula—do not overwork the meat. Divide the mixture into two equal portions and shape into slightly wider-than-bun patties about 3/4 inch thick. Make a shallow dimple in the center of each patty with your thumb to prevent doming while cooking.

Rest patties

Set formed patties on a tray, cover loosely with plastic wrap, and let rest at room temperature for 10–15 minutes while you prepare toppings and preheat cooking surface.

Buns & Cheese

Toast buns

Heat a skillet or griddle over medium heat. Spread softened butter evenly on the cut sides of the brioche buns. Place buns butter-side down on the hot surface and toast until golden brown, about 1–2 minutes. Remove and set aside, toasted side up.

Melt cheese

When patties are nearly cooked (see cooking step), place a slice of sharp cheddar on each patty. Cover the skillet or use a dome for 30–60 seconds to melt the cheese.

Prepare sauce

In a small bowl mix mayonnaise, yellow mustard, ketchup, smoked paprika and hot sauce (if using). Taste and adjust seasoning. This creates the PK Signature sauce—creamy with a mild smoky kick.

Prep vegetables

Thinly slice the tomato and red onion. Wash and pat dry the lettuce leaves. Have pickle slices ready.

Cooking the Patties

Preheat a heavy skillet, cast-iron pan or grill to medium-high heat (about 375–400°F / medium-high). Lightly oil the surface or brush the patties with a few drops of neutral oil to prevent sticking. Place the patties on the hot surface and cook without moving for 3–4 minutes to develop a crust. Flip once and cook 3–4 minutes for medium (adjust 1–2 minutes for rarer or more well-done). Add cheese in the final minute and cover to melt.

Assembly & Serving

Build the burger: Spread about 1 tablespoon of the prepared sauce on the bottom bun. Place the lettuce leaf on the sauce to create a moisture barrier, then set the cheesy patty on top. Add tomato slices, red onion rings, and dill pickle slices. Place bacon or caramelized onions if using. Spread a little sauce on the top bun and close the burger.
