Method
Cocktail
Prepare glass
If desired, chill a double old-fashioned glass or tiki mug by filling with ice and setting aside while you measure ingredients. Discard chilling ice before serving.
Combine ingredients
In a cocktail shaker, add 1 oz aged rum, 1 oz white rum, 1 oz fresh lime juice, 0.5 oz orange curaçao, 0.5 oz orgeat syrup, 0.25 oz simple syrup, and 1 dash Angostura bitters. Add a handful of ice (enough to fill the shaker about halfway).
Shake
Secure the shaker lid and shake vigorously for 10–15 seconds until the shaker exterior is well chilled and diluted slightly. This integrates the orgeat and citrus.
Prepare serving glass with ice
Fill the chilled double old-fashioned glass or tiki mug with crushed ice (about 1 cup). If you didn't chill the glass earlier, fill with fresh crushed ice now.
Strain
Strain the shaken cocktail over the crushed ice in the prepared glass, using a fine strainer or the shaker's built-in strainer to keep pulp and large ice shards out.
Float dark rum
Using the back of a bar spoon, slowly pour 0.25 oz dark rum over the top of the drink so it floats as a dark layer. This adds aroma and visual contrast.
Garnish and finish
Garnish with a mint sprig (slap the mint once between your palms to release aroma), a lime wheel or wedge, and optional cherry. Add 1 additional dash of Angostura bitters on top if desired. Insert a short straw and serve immediately.
