Prepare Chicken
Pat chicken breasts dry with paper towels. If breasts are very thick, butterfly or pound to an even thickness about 1/2 inch. Season both sides evenly with 1 tsp salt and 1/2 tsp black pepper.
Dredge
Place flour on a large plate and lightly dredge each breast, shaking off excess. Reserve remaining flour for thickening if needed.
Sear Chicken
Heat 2 tbs olive oil and 2 tbs butter in a large skillet over medium-high heat until butter foams. Add chicken and sear 3-4 minutes per side until golden brown and cooked through (internal temp 165°F / 74°C). Work in batches if needed. Transfer cooked chicken to a warm plate and tent with foil.
Deglaze & Simmer
Pour in 1/2 cup dry white wine to deglaze, scraping up browned bits from the pan with a wooden spoon. Allow wine to reduce by about half (2-3 minutes). Add 1 cup chicken stock and simmer 3-4 minutes to meld flavors.
Finish Sauce
Stir in 1/2 cup heavy cream, 1 tbs Dijon mustard, 2 tsp capers, 1.5 tbs lemon juice, 1 tbs fresh thyme leaves, remaining 1/2 tsp salt and 1/2 tsp black pepper. Simmer gently 2-3 minutes until slightly thickened. Taste and adjust seasoning.
Finishing & Garnish
Prepare Salad Bed
In a medium bowl, toss baby arugula and halved cherry tomatoes with 2 tbs extra-virgin olive oil, 1 tsp lemon zest, remaining 1/4 tsp salt, remaining 1/2 tsp black pepper, and red pepper flakes if using.
Plate
Arrange a bed of dressed arugula and tomatoes on four plates. Place a chicken breast on each bed and spoon extra sauce around. Garnish with additional parsley, a light drizzle of olive oil, and an extra sprinkle of Parmesan if desired.
Serve
Serve immediately while the chicken is warm and the sauce is silky. Offer lemon wedges at the table for extra brightness.
