Prepare Stabilizer (if using gelatin)
Bloom gelatin
If using gelatin for a very stable foam, sprinkle 0.5 tsp gelatin over 1 tbsp cold water in a small bowl. Let sit 5 minutes until gelatin blooms and becomes spongy.
Make Foam Base
Combine dairy and sugar
In a small saucepan, combine 1 cup whole milk, 0.5 cup heavy cream, and 2 tsp granulated sugar. Warm gently over low heat until the sugar dissolves and mixture is warm but not boiling (about 120–140°F / 49–60°C). Stir in 0.5 tsp vanilla extract and, if using, 0.5 tsp instant espresso powder until dissolved.
Add gelatin (optional)
If using gelatin, remove the warm milk mixture from heat and whisk the bloomed gelatin into it until fully dissolved (about 30 seconds). Allow mixture to cool slightly (5–10 minutes) to about warm, not hot.
Add lecithin
Whisk in 1 tsp soy lecithin powder until evenly distributed. Lecithin helps stabilize the air bubbles created in the next step.
Create Foam
Aerate mixture
Transfer the warm mixture to a tall container suitable for an immersion blender or to the pitcher of a milk frother. Using an immersion blender, hold the blade just below the surface and pulse 6–10 times, then slowly raise the blade to incorporate air, blending for a total of 30–45 seconds until a voluminous foam forms. Alternatively, use a high-speed milk frother or handheld electric whisk and froth until stiff foam forms (about 45–60 seconds).
Hand-shake alternative
If you don’t have electric tools, pour the warmed mixture into a sealable jar (leave room for expansion), close the lid tightly, and shake vigorously for 60–90 seconds until foamy. This method produces a lighter, less stable foam.
Stabilize cooling foam
Let the foam sit undisturbed for 1–2 minutes so large bubbles dissipate and a creamy microfoam forms. If you added gelatin, chill the container in an ice bath for 1–2 minutes while gently whisking to set the structure slightly for longer hold.
Finish & Serve
Spoon the foam on top of your beverage or use it alone as a light, decorative topping. Optionally dust with 1 tsp cocoa powder or finely grated chocolate for a sweet finish, or sprinkle 1 tsp micro herbs or citrus zest for a savory/bright note.
Serve immediately for the lightest texture. Foam made with lecithin will hold for 20–30 minutes; foam with gelatin will hold up to 1–2 hours refrigerated (texture will firm).
