Prepare honey simple syrup (if not ready)

Combine equal parts honey and hot water (e.g., 1/4 cup honey + 1/4 cup hot water). Stir until honey is fully dissolved. Cool to room temperature before using. Store refrigerated for up to 2 weeks.

Add 2 oz Irish whiskey, 1/2 oz Green Chartreuse, 1/2 oz fresh lime juice, 1/2 oz honey simple syrup, 1/4 oz dry vermouth and 2 dashes Angostura bitters into a cocktail shaker.

Fill the shaker with ice (about 4–6 medium cubes). Secure the lid and shake vigorously for 12–15 seconds until well-chilled and slightly diluted.

Double-strain the cocktail into a chilled coupe or Nick & Nora glass (or over one large ice cube in a rocks glass if preferred) to remove small ice chips and any pulp from the lime juice.

Express the oils of a lime twist over the drink or drop in a lime wheel. Garnish with a fresh mint sprig: clap the mint once between your palms to release aroma and place it on the rim or floating atop the drink.

Serve immediately. Sip and enjoy the herbal brightness of the Chartreuse balanced by smooth Irish whiskey, honey sweetness and a touch of citrus and bitters.
