Pat the separated wings thoroughly dry with paper towels. Removing surface moisture is essential for crisping.

Place the wings in a large bowl. Add the baking powder, kosher salt, black pepper, garlic powder, paprika, and 1 tablespoon vegetable oil. Toss thoroughly until each piece is evenly coated. The baking powder helps draw out moisture and create a crisp exterior.

For best results, place the coated wings on a wire rack set over a baking sheet and refrigerate, uncovered, for 30 minutes to 2 hours. If short on time, allow at least 15–20 minutes at room temperature to let the coating adhere.

Oven Crisping Method (Healthier) - 45–55 minutes

Preheat oven

Preheat your oven to 425°F (220°C). Position a rack in the middle of the oven.

Line a baking sheet with foil for easy cleanup and place a wire rack on top. Lightly oil the wire rack or spray with cooking oil to prevent sticking. Arrange the wings in a single layer with space between pieces so hot air circulates.

Bake for 25 minutes, then flip each wing and continue baking for another 15–25 minutes, until the skin is deep golden and very crisp and the internal temperature reads 165°F (74°C). Exact time depends on wing size and oven. For extra crispness, switch to broil on high for 2–3 minutes, watching closely to avoid burning.

Remove wings from oven and let rest 5 minutes on the rack so the steam escapes and skin remains crisp.

Frying Method (Crispiest) - 20–25 minutes

Pour 1/2 cup neutral oil into a large skillet or shallow Dutch oven and heat over medium-high until the oil reaches 350°F (175°C). If you do not have a thermometer, test by dropping a small piece of wing skin; it should sizzle immediately and float.

Working in batches (avoid crowding), carefully add wings to the hot oil and fry for 6–8 minutes, turning occasionally, until the skin is deep golden-brown and internal temperature is 165°F (74°C). Adjust heat as needed to maintain 325–350°F so the exterior crisps without burning.

Transfer cooked wings to a wire rack set over a baking sheet to drain and stay crisp. Rest 3–5 minutes before saucing or serving.

Sauce Options & Finishing

Buffalo-style

In a small saucepan over low heat, melt 2 tablespoons unsalted butter. Stir in 1/4 cup hot sauce until combined and warm. Toss the hot wings in the buffalo sauce until evenly coated. Finish with a squeeze of fresh lemon juice and chopped parsley, if desired.
