Cookie Base

Line an 8-inch (20 cm) springform pan or a shallow serving dish with parchment paper (optional) to make removal easier.

Combine the finely crushed chocolate sandwich cookies (2 cups) with the melted unsalted butter (4 tbs) in a medium bowl. Add cocoa powder (1 tsp) and granulated sugar (1 tsp) if using, and mix until the crumbs are evenly moistened and hold together when pressed.

Press the crumb mixture evenly into the bottom of the prepared pan to form a firm base, using the bottom of a measuring cup or glass to compact it. Chill in the refrigerator while you prepare the filling, about 15–20 minutes.

Cookies & Cream Filling

In the bowl of a stand mixer fitted with the paddle attachment (or using a hand mixer), beat the room-temperature cream cheese (8 oz) on medium speed until smooth and free of lumps, about 1–2 minutes.

Gradually add the sifted powdered sugar (1 cup) and vanilla extract (1 tsp), mixing until incorporated and smooth. Scrape down the bowl as needed.

In a separate chilled bowl, whip the cold heavy cream (1 cup) to medium-stiff peaks using a whisk or whip attachment (about 2–3 minutes). Take care not to overbeat to avoid turning it grainy.

Fold one-third of the whipped cream into the sweetened cream cheese gently to lighten the mixture. Fold in the remaining whipped cream until uniform and airy.

Stir in the chocolate liqueur (3 tbs) until evenly distributed through the filling.

Gently fold in the finely chopped reserved chocolate sandwich cookies (3 oz) so they are evenly dispersed but not crushed completely.

Spoon or pipe the cookies & cream filling over the chilled crumb base, smoothing the top with a spatula. Cover and refrigerate for at least 4 hours, preferably overnight, to set thoroughly.

Chocolate Liqueur Drizzle & Garnish

About 20 minutes before serving, make a quick chocolate-liqueur drizzle: place the chopped semisweet chocolate (2 oz) and heavy cream (2 tbs) in a small heatproof bowl. Microwave in 10–15 second bursts, stirring after each, until smooth (or heat cream until just simmering and pour over chocolate).

Stir in the extra chocolate liqueur (2 tbs) into the warm chocolate mixture until fully incorporated. Allow the drizzle to cool slightly so it’s pourable but not hot.

Remove the chilled dessert from the pan and place it on a serving plate. Drizzle the chocolate-liqueur ganache over the top in a decorative pattern.

Garnish with whole cookies or extra cookie crumbs to taste. If desired, brush a light wash of extra chocolate liqueur on whole cookie halves for an added boozy touch.

Return to the refrigerator for 10–15 minutes to allow the drizzle to set slightly, then slice and serve chilled.
