Prepare glass

Chill a coupe or martini glass by filling it with ice and cold water while you prepare the cocktail. Set aside.

Dry shake

If using egg white, add gin, orange curaçao, cranberry juice, lemon juice, simple syrup and the egg white to a cocktail shaker without ice. Secure the lid and shake vigorously for 10–15 seconds to emulsify and build foam.

Wet shake

Add ice to the shaker (about 4–6 medium cubes). Shake again vigorously for 10–15 seconds until the shaker is cold to the touch and the mixture is well chilled and slightly frothy.

Strain

Dump the ice and water from the chilled glass. Fine-strain the cocktail into the chilled coupe or martini glass to remove ice shards and produce a smooth texture.

Finish

Add one dash of Angostura bitters onto the foam (if egg white used) and use a toothpick to create a simple pattern if desired. Twist the lemon peel over the drink to release oils, rub it on the rim, and drop it in as garnish.

Serve
