Chill glass

Place a coupe or chilled rocks glass in the freezer for a few minutes or fill with ice water to chill while you prepare the drink.

Measure and combine

In a mixing glass or shaker filled about halfway with ice, add 2 oz rye whiskey (or bourbon), 1 oz Averna (or preferred amaro), 2 dashes Angostura bitters and 1 dash orange bitters. If you prefer a slightly sweeter drink, add 0.25 tsp simple syrup.

Stir

Using a bar spoon, stir the mixture briskly for 20–30 seconds (about 15–20 full rotations) until well chilled and properly diluted (mix is cold and the mixing glass is frosty).

Prepare garnish

Discard ice or water from the chilled serving glass. Express the oils from an orange peel over the glass by holding the peel with the outer (orange) side down, give it a firm twist across the rim so oils spray into the drink, then rub the peel around the rim and drop it in. Skewer a maraschino cherry if desired.

Strain and serve

Double-strain (or use a Hawthorne/ julep strainer) the chilled cocktail into the chilled coupe or rocks glass over no ice (serve up) or over one large ice cube if preferred. Garnish with the orange peel and the maraschino cherry. Serve immediately.
