Combine and simmer

Add ketchup, apple cider vinegar, 2 tablespoons brown sugar, molasses, Worcestershire sauce, smoked paprika, cumin, garlic powder, onion powder, black pepper, hot sauce, water, and 1 teaspoon salt to a small saucepan.

Cook to meld flavors

Place saucepan over medium heat and bring to a gentle simmer, stirring frequently. Reduce heat to low and simmer uncovered for 12–15 minutes until sauce thickens slightly and flavors meld. Stir occasionally to prevent sticking.

Adjust seasoning

Taste and adjust seasoning: add more salt, vinegar for brightness, brown sugar for sweetness, or hot sauce for heat. If sauce is too thick, stir in 1–2 tablespoons water. Remove from heat and let cool slightly before using.

Bacon

Preheat oven and prepare pan

Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top. The rack lets fat drip away and helps bacon crisp evenly.

Coat bacon

Pat bacon slices dry with paper towels. Mix 2 tablespoons brown sugar and 1 teaspoon black pepper on a plate. Lightly press each bacon slice into the sugar-pepper mixture on both sides to coat evenly.

Bake bacon until crisp

Arrange bacon in a single layer on the wire rack, not overlapping. Bake in the preheated oven for 12–18 minutes, depending on thickness, until edges are crisp and sugar has caramelized. Start checking at 10–12 minutes to avoid burning.

Drain and keep warm

Transfer cooked bacon to a paper towel–lined plate to drain excess fat. If keeping for a few minutes, place in a warm oven (about 200°F / 95°C) on a separate tray so it stays crisp.

Assembly & Serve

Use sauce and bacon

If using on sandwiches or with smoked meat, brush the warm Texan BBQ sauce on buns or meat. Layer 2 slices of crispy bacon per serving over the sauced meat or bun.

Garnish and finish

Top with pickles and sprinkle chopped cilantro or parsley if desired. Serve immediately while bacon is crisp and sauce is warm.

Storage

Store leftover BBQ sauce in an airtight container in the refrigerator for up to 10 days. Keep cooked bacon refrigerated for up to 4 days; re-crisp in a 375°F (190°C) oven for 4–6 minutes.
