Prepare aromatics
Heat a large skillet over medium-high heat. Add the vegetable oil and swirl to coat. Add the diced onion and cook, stirring occasionally, until softened and translucent, about 3–4 minutes. Add the minced garlic and cook 30 seconds until fragrant.
Brown the beef
Push the onions to the side, add the ground beef to the skillet, and break it up with a spatula. Cook until browned with no pink remaining, about 5–7 minutes. Drain excess fat if there is more than 1 tablespoon.
Season and simmer
Stir in the tomato paste and cook 1 minute. Sprinkle in chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Pour in the broth, stir to combine, and bring to a gentle simmer. Reduce heat to medium-low and simmer uncovered 5–7 minutes until mixture slightly thickens and flavors meld.
Finish with lime
Remove from heat and stir in 1 tablespoon lime juice. Taste and adjust salt or spices as needed. Keep warm while preparing toppings and tortillas.
Quick Pico de Gallo (optional)
Combine diced tomatoes, white onion, chopped cilantro, 1 tablespoon lime juice, 1/4 teaspoon salt, and 1/8 teaspoon black pepper in a small bowl. Stir and let sit 5–10 minutes to allow flavors to marry. Taste and adjust seasoning.

Assemble tacos
Divide the warm tortillas among plates. Spoon about 2 tablespoons of the beef filling into each tortilla (adjust for size and appetite). Top each taco with shredded cheese, lettuce, diced tomatoes, a spoonful of pico (if using), diced red onion, cilantro, jalapeño slices (if using), and a drizzle of sour cream. Add hot sauce to taste.
Serve
Serve tacos immediately with lime wedges on the side for squeezing over. Offer extra cilantro, hot sauce, and sour cream for guests to customize.
