Base (chickpeas & potatoes)

    Prepare chickpeas

    If using canned chickpeas: drain and rinse under cold water, then drain thoroughly. If you have home-cooked/dried chickpeas: ensure you have 3 cups cooked; if using dried, soak overnight and pressure-cook until tender (not mushy). Set cooked chickpeas aside to cool slightly.

    Cook potatoes

    Place the cubed potatoes in a pot, cover with cold water, add 0.5 tsp salt and turmeric. Bring to a boil, then simmer 10–12 minutes until just fork-tender (do not overcook). Drain and spread on a tray to cool for 5 minutes so they keep their shape. Toss warm potatoes with 1 tbs oil to prevent sticking.

Tamarind sauce (marinade)

    Combine 3 tbs tamarind paste, 120 ml water and 3 tbs jaggery (or brown sugar) in a small saucepan. Bring to a gentle simmer over medium heat, stirring until jaggery dissolves and the mixture thickens slightly, about 5–7 minutes.

    Remove from heat and stir in 1 tsp roasted cumin powder, 0.5 tsp black salt (or regular salt), 0.25 tsp red chili powder and 0.25 tsp salt. Taste and adjust sweetness, tartness or spice — add a splash more water if too thick. Let cool to room temperature (5–10 minutes).

Green chutney (optional)

    If using green chutney, combine 1 cup cilantro, 0.5 cup mint, 1 green chili, 1 tbs lemon juice, 0.5 tsp salt and 2 tbs water in a blender. Blitz to a smooth paste, adding a little more water if needed to reach a thick, pourable consistency. Transfer to a bowl.

Mix-ins & garnish

    Have your mix-ins ready: 0.5 cup finely chopped red onion, 0.5 cup diced tomato, 0.5 cup diced cucumber, 1 chopped green chili (if using), 0.5 cup chopped cilantro, 1 tbs lemon juice and 1 tsp chaat masala measured out. Keep sev and pomegranate ready for immediate garnish so they stay crunchy.

Assemble & marinate

    In a large mixing bowl combine the cooled cooked chickpeas (3 cups) and the cooled potato cubes. Pour the prepared tamarind sauce over them — start with about 3/4 of the sauce and reserve the rest to adjust later. Gently toss to coat evenly.

    If using green chutney, drizzle 1–2 tbs of the chutney into the mixture and toss again to get a balanced sweet-tart-green flavor. Add the chopped onion, tomato, cucumber and chopped green chili. Sprinkle 1 tbs lemon juice, 1 tsp chaat masala, 0.5 tsp roasted cumin powder and 1 tsp salt (or to taste). Gently fold everything together.

    Taste and adjust: add more tamarind sauce for tang/sweetness, more green chutney for herbiness, or extra lemon/chaat masala for brightness. Let the salad marinate for at least 15 minutes at room temperature so flavors meld (you can refrigerate for up to 30 minutes if you prefer it cool).

To serve

    Transfer the marinated channa chat to a serving bowl. Just before serving, sprinkle with 0.5 cup sev and 0.25 cup pomegranate seeds (if using). Scatter the remaining 0.5 cup chopped cilantro, a light dusting of extra chaat masala and 0.25 tsp roasted cumin powder.

    If you like a creamier chaat, drizzle 0.25 cup plain yogurt over top or serve it on the side. Serve immediately with lemon wedges so each guest can add extra brightness. Leftovers can be kept chilled up to 1 day, but sev should be added only when serving to keep it crunchy.
