    Prep

    Rinse 1 cup basmati rice under cold water until the water runs clear, then soak in cold water for 15 minutes. While rice soaks, wash the cauliflower and break into medium florets (1 head). Peel and cube 2 medium potatoes into roughly 1/2-inch pieces to ensure they cook through at the same rate as the cauliflower. Finely chop 1 large onion and 1 medium tomato. Mince 3 cloves garlic, grate a 1-inch piece of ginger, and slit 1 small green chili if using.

    Cook the rice

    Drain the soaked rice. In a medium saucepan, bring 2 cups water to a boil with 1 tsp oil/ghee and 1/2 tsp salt. Add the rice, stir once, reduce heat to low, cover tightly and simmer 12–15 minutes until water is absorbed and rice is tender. Remove from heat and let rest covered for 5 minutes, then fluff with a fork just before serving.

    To shorten frying time and ensure tender potatoes, par-cook the cubed potatoes: place them in a microwave-safe bowl with 1–2 tbsp water, cover loosely, and microwave on high for 3–4 minutes until slightly tender but not falling apart. Alternatively, par-boil in simmering water for 4–5 minutes and drain well.

    Begin the Aloo Gobi

    Heat 3 tbsp vegetable oil in a large wide skillet or heavy-bottomed pan over medium heat. When the oil is hot, add 1 tsp cumin seeds and let them sizzle for 10–15 seconds until aromatic (do not burn). Add the finely chopped onion and sauté 5–6 minutes until translucent and beginning to brown at the edges.

    Add aromatics and spices

    Stir in the minced garlic, grated ginger, and slit green chili. Cook 1 minute until fragrant. Add 1 tsp turmeric powder, 1 tbsp coriander powder, 0.5 tsp cumin powder, and 0.5 tsp red chili powder. Cook the spice mixture 30–45 seconds, stirring constantly so the spices bloom but do not burn.

    Add tomato and potatoes

    Add the chopped tomato and cook 2–3 minutes until it softens and starts to break down. Add the par-cooked potato cubes, 1 tsp salt (from the curry salt amount) and toss to coat the potatoes evenly in the spice-onion mixture. Sauté 3–4 minutes so the potatoes get a light golden crust.

    Add cauliflower and simmer

    Add the cauliflower florets to the pan and sprinkle the remaining 0.5 tsp salt (so total 1.5 tsp used in the curry). Stir everything together. Pour in 1/4 cup water to create a little steam, reduce heat to low-medium, cover the pan and let simmer 8–12 minutes, stirring once or twice, until the cauliflower and potatoes are tender but not mushy. If mixture looks dry or sticks, add 1–2 tbsp additional water as needed.

    Finish the dish

    Uncover, increase heat to medium-high and sauté 1–2 minutes to evaporate excess moisture and allow any cut surfaces to brown slightly. Sprinkle 0.5 tsp garam masala over the vegetables and gently fold to combine. Taste and adjust salt or chili as needed. Turn off the heat and stir in 2 tbsp chopped fresh cilantro and 1 tbsp lemon juice to brighten the flavors.

    Serve

    Spoon the fluffy basmati rice onto plates and serve the hot Aloo Gobi alongside. Garnish with extra cilantro if desired. Serve immediately.

    Notes and tips

    If you prefer a drier Aloo Gobi, use less water when simmering and cook uncovered longer to evaporate moisture. For more depth, brown the potatoes a bit longer before adding cauliflower. Adjust red chili and green chili to taste. Leftovers keep well refrigerated for 3–4 days and can be gently reheated on the stovetop.
