Cook the Lobster
Bring a large pot of salted water to a boil. Add the whole Maine lobster and cook for about 8-10 minutes, or until the lobster is bright red and fully cooked. Remove the lobster from the pot and place it in an ice bath to cool.
Prepare the Lobster
Once the lobster is cooled, carefully split it in half lengthwise using a lobster cracker or a sharp knife. Remove any uneaten green tomalley or roe, if desired.
Season and Serve
Drizzle the lobsters with olio verde olive oil and sprinkle Maldon sea salt over the meat. Squeeze fresh lemon juice over the top before serving. Serve chilled.
