Prepare the Octopus

Bring a large pot of salted water to a boil. Add the octopus and simmer for about 45 minutes, or until tender. Remove from water and let cool.

Char the Octopus

Preheat a grill or grill pan over medium-high heat. Cut the octopus into manageable pieces, brush with olive oil, and season with salt and pepper. Grill for about 3-4 minutes on each side until charred.

Make the Harissa Aioli

In a small bowl, mix the harissa paste with a bit of olive oil and Meyer lemon juice. Adjust seasoning to taste.

Serve

On a serving plate, place the white beans as a base. Top with charred octopus, drizzle with harissa aioli, and garnish with fresh parsley and additional Meyer lemon juice if desired.
