Take the NY Strip steaks out of the refrigerator and let them come to room temperature for about 30 minutes. Pat them dry with paper towels.

Generously season both sides of the steaks with salt and black pepper.

In a large skillet, heat the olive oil over medium-high heat until shimmering.

Add the steaks to the hot skillet and sear them for about 4-5 minutes on each side for medium-rare, adjusting the time according to your desired doneness.
