Prepare the Onions

Slice the yellow onions thinly. In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized, approximately 25-30 minutes.

Add Liquid Ingredients

Pour in the white wine and scrape the bottom of the pot to deglaze. Let it simmer for 5 minutes. Then, add the beef broth, thyme, bay leaf, salt, and black pepper. Bring to a simmer.

Simmer the Soup

Reduce the heat to low and let the soup simmer uncovered for 30 minutes, allowing the flavors to meld. Adjust seasoning if needed.

Prepare the Bread

While the soup is simmering, preheat the oven to 400°F (200°C). Slice the French baguette into thick pieces and toast them in the oven until golden.

Serve the Soup

Ladle the soup into oven-safe bowls. Place a slice of the toasted baguette on top of each bowl and sprinkle generously with gruyère cheese. Place the bowls on a baking sheet and put them under the broiler until the cheese is bubbly and golden, about 2-3 minutes.
