    Prepare corn

    If using fresh corn, cut kernels from 3 medium ears (about 3 cups). If using frozen, thaw and drain well. Pat kernels dry with paper towels to remove excess moisture.

    Combine dry ingredients

    In a large bowl, whisk together 3 tbs all-purpose flour, 2 tbs fine cornmeal (or masa harina), 1 tsp baking powder, 1 tsp kosher salt, 1/2 tsp black pepper, 1 tsp smoked paprika, 1/2 tsp ground cumin, and 1/2 tsp chili powder until evenly distributed.

    Mix wet ingredients

    In a separate small bowl, whisk 1 large egg with 3 tbs sour cream (or Mexican crema) and 2 tbs grated Cotija/Parmesan. Add to the dry mixture and stir just until incorporated.

    Fold in corn and cilantro

    Fold 3 cups prepared corn kernels and 1/4 cup finely chopped cilantro into the batter until coated. The mixture should hold together when pressed; if too loose, add up to 1 tbs more flour or cornmeal. If too stiff, add 1 tbs water or sour cream.

Cooking (fry or roast)

    Option A — Pan-fry (crispiest)

    Heat a large skillet over medium-high and add enough neutral oil to reach about 1/8-inch depth (approx. 3-4 tbs from the 1/2 cup). When oil shimmers (about 350°F), drop heaping tablespoons of the corn mixture into the pan, flattening slightly to form 1 1/2-inch rounds. Cook in batches without crowding, 3–4 minutes per side, until golden brown and crisp. Transfer to a paper towel-lined tray to drain and season lightly with salt.

    Option B — Oven-roast (lighter)

    Preheat oven to 425°F (220°C). Line a baking sheet with parchment and brush lightly with oil. Using a tablespoon, form 1 1/2-inch mounds and flatten slightly onto the sheet. Brush tops with a little oil. Roast 12–15 minutes, until edges are golden, flip and roast another 6–8 minutes until crisp. Remove and keep warm.

    Keep warm and finish

    If cooking in batches, keep cooked bites on a baking sheet in a 200°F (95°C) oven to stay warm while finishing remaining batter.

Crema drizzle

    While bites cook, whisk together 1/2 cup Mexican crema or sour cream, 1 tbs mayonnaise, 1 tbs lime juice, 1/2 tsp finely minced garlic, and 1/4 tsp salt in a small bowl until smooth. Taste and adjust lime or salt as needed. Transfer to a squeeze bottle or small piping bag for easy drizzling.

Assembly & garnish

    Arrange warm elote bites on a platter. Drizzle each bite with crema (about 1 tsp per bite), sprinkle with crumbled 3/4 cup Queso Fresco (distribute evenly), a pinch of extra smoked paprika for color, and scatter remaining 2 tbs chopped cilantro.

    Serve immediately with lime wedges (from 2 limes). Encourage guests to squeeze a little lime over each bite before eating.
