Breakfast (mon-thru) — Main
- 1
Prepare
Remove bacon from refrigerator so it can come closer to room temperature while you heat the pan (about 5 minutes). Crack eggs into a small bowl (one egg per bowl) and set aside. Have a plate lined with paper towel ready to rest cooked bacon.
- 2
Cook the bacon
Place a large skillet (preferably cast-iron or heavy-bottom) over medium heat. Lay the 6 slices of bacon in a single layer without overlapping. Cook for about 4–6 minutes on the first side, then flip and cook another 3–5 minutes, adjusting time for desired crispness. Reduce heat slightly if bacon is browning too fast. Use tongs to move and flip slices so they cook evenly.

- 4
Fry the eggs
Increase heat to medium-low and add 1 tbsp unsalted butter to the skillet, swirling to melt. Gently slide the eggs from their bowls into the pan (or crack directly if preferred). Cook eggs sunny-side up for 2–3 minutes until whites are set but yolks still runny; for over-easy, cook 1–2 minutes then gently flip and cook 15–30 seconds more. Season both eggs with 1/4 tsp salt and 1/8 tsp black pepper while cooking.
- 5
Rest and plate
When eggs are done to your liking, transfer them to the plate alongside the drained bacon. Keep the plate warm while you finish the sides (or plate the sides alongside if already done).

Toast the bread
While bacon is cooking or after transferring bacon to drain, toast 2 slices of bread in a toaster to your preferred level, or toast in a clean skillet over medium heat for 1–2 minutes per side. As soon as toast is hot, spread 1 tbsp unsalted butter across both slices so it melts in.
- 7
Sauté the cherry tomatoes
Using the same skillet used for eggs (wipe if very greasy, leaving a little flavor), heat 1 tsp olive oil over medium heat. Add 6 cherry tomatoes halved (or whole if small) and sauté for 1–2 minutes until they begin to blister and soften. Season with a small pinch of salt (about 1/8 tsp) and a small pinch of black pepper (about 1/16 tsp).
- 8
Garnish
Sprinkle 1 tbsp chopped fresh parsley over the tomatoes and, if desired, a light sprinkle across the eggs and bacon for color and freshness.
- 9
Assemble and serve
Place the buttered toast on the plate with the eggs and bacon. Spoon the blistered cherry tomatoes beside the toast. Serve immediately while hot.
