Wash and prep lettuce
Rinse romaine thoroughly, spin or pat dry, then chop into roughly 1"–1.5" pieces. Place the chopped romaine in a large shallow bowl or on a serving platter and set aside.

Cook the bacon
Cook the 8 bacon slices until crisp: in a skillet over medium heat (about 8–10 minutes, turning occasionally) or on a rimmed baking sheet in a 400°F (200°C) oven for 15–18 minutes. Transfer bacon to paper towels to drain, then chop or crumble into bite-size pieces.

Prepare the corn
Heat 1 tsp of the olive oil in a skillet over medium-high heat. Add the corn and cook, stirring occasionally, until heated through and slightly charred (3–5 minutes). If using canned corn, drain and sauté 2–3 minutes to remove excess moisture and add a little char. Transfer to a small bowl to cool slightly.

Prep avocado and cucumber
While the corn cools, slice the avocados and toss the slices gently with the lemon juice to prevent browning. Dice the cucumber into bite-size pieces. Place both in separate small bowls so they remain fresh and distinct until assembly.

Cheese
If your cheese isn't already crumbled, crumble it into small pieces and set aside.

Dress and season
Taste the blue cheese dressing and whisk or shake briefly to combine. In a small bowl combine remaining 1 tbsp olive oil, 1 tbsp lemon juice, 1/2 tsp salt, and 1/4 tsp black pepper — this is an optional light toss dressing to brighten the romaine if you prefer a lighter finish under the blue cheese. Keep the blue cheese dressing separate for serving or drizzle at the end.

Arrange the Cobb
On the bed of chopped romaine, arrange the toppings in rows or evenly distribute: place chopped bacon, charred corn, avocado slices, diced cucumber, and cheese crumbles in distinct lines or sections across the lettuce so each bite gets a variety. If you prefer tossed salad, drizzle the light toss dressing over the romaine and gently toss before arranging toppings.

Finish and serve
Either drizzle the blue cheese dressing over the entire salad (about 1/2 cup) and gently toss to combine, or serve the blue cheese dressing on the side. Adjust seasoning with additional salt and pepper to taste. Serve immediately so avocados remain bright and bacon stays crisp.
