    Chill glass

    Place a champagne flute or a tall Collins glass in the freezer for 5 minutes, or fill it with ice water while you assemble ingredients to chill, then discard the ice water before building the drink.

    Add ice

    If using a Collins glass, add the ice cubes to the chilled glass. For a flute, you can skip ice and serve without it.

    Measure and pour schnapps

    Pour 45 ml peach schnapps into the glass over the ice (or into the chilled flute). This is the cocktail's peach backbone.

    Add orange juice

    Add 90 ml fresh orange juice to the glass. If using a flute, pour gently to avoid splashing.

    Top with sparkling wine

    Slowly top the mixture with 60 ml chilled sparkling wine (Champagne or Prosecco). Pour gently down the side of the glass or over the back of a spoon to preserve bubbles.

    Combine gently

    Give the drink a gentle stir once or twice with a bar spoon to integrate the schnapps and juice without flattening the sparkling wine.

    Garnish

    Thread the orange wheel (and optional cocktail cherry) on the rim or skewer and place on top of the glass.

    Serve immediately while the sparkling wine is still bubbly. Provide a straw for a Collins glass or serve neat in the flute.
