Black Iced Tea

Method

Black Iced Tea

  1. 1

    Boil and steep

Bring 4 cups of water to a rolling boil. Remove from heat and add 4 black tea bags. Steep for 4 to 5 minutes for a balanced strength (up to 6 minutes for a stronger tea).

  2. 2

    Remove bags and cool

Remove the tea bags; gently press them against the side of the pot with a spoon to extract flavor without squeezing (which can add bitterness). Let the brewed tea cool for 5 minutes at room temperature.

  3. 3

    Chill quickly

To cool faster, add 2 cups of ice to the warm tea to bring temperature down (this will slightly dilute the tea). Stir until the ice melts, then transfer the tea to the refrigerator or an ice bath until cold (about 10–15 minutes if using the ice method).

Fresh Lemonade

  1. 4

    Make simple syrup

In a small saucepan combine 1 cup granulated sugar and 1 cup water. Heat over medium, stirring until the sugar fully dissolves and the mixture is clear (do not need to boil vigorously). Remove from heat and let the simple syrup cool to room temperature.

  2. 5

    Mix lemonade

In a pitcher combine 1 cup fresh lemon juice, the cooled simple syrup, and 2 cups cold water. Stir well and taste. If too sweet, add up to 1/4 cup additional water; if too tart, add up to 2 tablespoons additional syrup. Chill in the refrigerator until cold (or use ice when assembling).

To Serve

  1. 6

    Combine tea and lemonade

Once the tea and lemonade are cold, combine them in equal parts: pour the 4 cups of chilled tea and the 4 cups of lemonade into a large pitcher and stir gently to blend (total ~8 cups).

  2. 7

    Serve over ice

Fill glasses with about 1 cup of ice each (use the 4 cups of serving ice). Pour the Arnold Palmer over the ice (about 2 cups per serving). Garnish each glass with a lemon slice and a mint sprig if desired. Serve immediately.

  3. 8

    Adjustments and storage

Taste before serving and adjust sweetness or tartness by adding small amounts of simple syrup or lemon juice to individual glasses if needed. Store leftovers refrigerated for up to 48 hours; stir before serving.
