    Pan-fry the potatoes

    Heat a 10-inch nonstick or cast-iron skillet over medium-high heat. Add 1 tbsp olive oil and let it shimmer. Add the diced potatoes in a single layer if possible. Sprinkle 1/2 tsp kosher salt and 1/4 tsp black pepper over the potatoes. Cook, stirring or tossing every 3–4 minutes, until the cubes are golden brown and tender when pierced with a fork, about 10–12 minutes total. Reduce heat if they begin to brown too fast. Transfer cooked potatoes to a plate and keep warm.

    Caramelize the onion

    Wipe the skillet clean and return it to medium-low heat. Add 1 tbsp unsalted butter. When the butter melts, add the thinly sliced onion and 1 tsp sugar (optional). Cook, stirring occasionally, until the onion becomes soft and deeply golden brown, 10–15 minutes. If the pan gets too dry, add a splash of water to deglaze and continue cooking. Remove caramelized onion to a small bowl.

    Cook the sausage

    Increase heat to medium. Add 1 tsp olive oil to the same skillet. Add the crumbled turkey sausage and cook, breaking it up with a spatula, until browned and cooked through, about 4–6 minutes. Use a slotted spoon to transfer the cooked sausage to the bowl with the caramelized onion.

    Sauté mushrooms and tomatoes

    In the same skillet over medium heat, add the sliced mushrooms. Sauté 2–3 minutes until they release moisture and begin to brown. Add the quartered tomatoes and cook 1–2 minutes more just until the tomatoes soften but still hold shape. Return the cooked sausage and caramelized onion to the skillet and stir to combine. Add the chopped cilantro (1/4 cup) and fold in the reserved potatoes. Taste and adjust seasoning with a pinch of salt and pepper if needed. Keep filling warm on low heat while you prepare the eggs.

Eggs & Cheese

    Whisk the eggs

    In a medium bowl whisk together 3 large eggs, 2 tbsp whole milk, 1/2 tsp kosher salt, and 1/4 tsp black pepper until fully blended and slightly frothy. This will give a tender texture to the omelette.

    Cook the omelette

    Heat a clean 8–10 inch nonstick skillet over medium-low heat. Add 1 tbsp unsalted butter and swirl to coat the pan. Once the butter foams but does not brown, pour in the egg mixture and let it sit undisturbed for about 20–30 seconds until the edges set. Using a spatula, gently push the set edges toward the center while tilting the pan so uncooked egg flows to the edges. Continue until the eggs are mostly set but still slightly glossy on top, about 1–2 minutes total.

    Add filling and cheese

    Spread about half of the sausage-potato-vegetable mixture evenly over one half of the omelette. Sprinkle the 2 oz shredded muenster cheese over the filling so it begins to melt. If desired, add a little extra filling or cheese to taste. Use the spatula to gently fold the empty half of the omelette over the filled half to form a semicircle. Let cook 30–60 seconds longer so the cheese melts through.

    Finish

    Carefully slide the omelette onto a plate seam-side down. If you warmed any extra potatoes/sausage, spoon a little next to the omelette or on top as desired. If using, sprinkle the extra 0.5 oz muenster on top so it melts from residual heat.

Finish & Garnish

    Garnish the omelette with 1 tbsp extra chopped cilantro. Serve immediately with any remaining pan-roasted potatoes and a wedge of tomato if you like. The omelette is naturally gluten-free—confirm sausage packaging if strict GF diet is required.
