Make basil tea (advance)
Steep 1 tablespoon of fresh basil leaves in 4 oz (120 ml) of just-boiled water for 5 minutes. Strain and chill until cool. You will need about 1 oz cooled tea per cocktail; reserve extra in refrigerator for another drink.
Muddle fruit & herbs
In a cocktail shaker or mixing glass, place the hulled fresh strawberries and 5 of the basil leaves. Add the simple syrup and lime juice. Using a muddler, gently press and twist until the strawberries are broken down and basil is fragrant (about 10–15 seconds). Do not over-muddle the basil to avoid bitterness.
Build the drink
Add the Bombay Gin and the cooled basil tea to the shaker with the muddled strawberry mixture. Fill the shaker about two-thirds with crushed ice.
Shake & strain
Shake vigorously for 10–12 seconds to chill and slightly dilute. Double-strain the mixture into a rocks glass filled with fresh crushed ice to remove strawberry seeds and basil bits. If you prefer more texture, single strain only.
Top & garnish
Top the drink with 1.5 oz club soda and gently stir once to combine. Garnish with the remaining basil leaf (smacked between your hands first to release aroma) and a strawberry slice on the rim.
Serve
Serve immediately with a short straw. Recommend sipping slowly to enjoy the interplay of strawberry, basil, bright lime, and the botanical gin.
