Prepare simple syrup (if using)

If you don't have simple syrup, make quick syrup by combining equal parts sugar and water (e.g., 1/4 cup each) in a small saucepan, heat until sugar dissolves, then cool. Use 1 tablespoon for this recipe.

In a pitcher, combine 1 cup chilled Pinot Grigio, 1/4 cup orange liqueur, 1 tablespoon fresh lemon juice and 1 tablespoon simple syrup. Stir gently to combine.

Prepare the fruit: wash all fruit. Slice stone fruit into thin wedges, hull and halve large strawberries, thinly slice apple or pear, and cut citrus into thin rounds or half-moons.

Add the prepared fruit to the pitcher with the wine mixture. Gently stir to combine so the fruit is evenly distributed.

Let the mixture macerate in the refrigerator for at least 30 minutes and up to 4 hours to allow flavors to meld. For immediate service, proceed to the next step but expect less pronounced fruit flavor.

When ready to serve, add 1 cup ice to the pitcher (or fill individual glasses with ice) and pour in 1/2 cup chilled soda water. Stir gently to combine and preserve some effervescence.

Taste and adjust sweetness or acidity: add additional simple syrup (1 tsp at a time) if sweeter sangria is desired, or a squeeze more lemon if it needs brightness.

Pour into glasses, making sure each serving gets a good mix of fruit. Garnish each glass with a sprig of fresh mint if desired.
