Prep bread and cheese
If your cheddar is not pre-sliced, grate or thinly slice enough to equal about 1 cup. Lay out two slices of sourdough. On the interior side of each slice, spread butter evenly to the edges. If using mayonnaise instead of butter on the inside (for extra creaminess) spread 1 teaspoon on one interior side and reduce butter on the outside by 1/2 tablespoon per slice as desired.
Assemble sandwich
Place one slice of sourdough, buttered side down, in front of you. Layer half the sharp cheddar (about 1/2 cup) evenly over the bread. Add the two slices of American cheese on top of the cheddar so they overlap slightly. Arrange the tomato slices in a single layer over the American cheese. Sprinkle remaining 1/4 teaspoon salt, remaining black pepper and the dried oregano or basil evenly over the tomato. Top with the remaining cheddar to help melt through, then place the second bread slice on top, buttered side up.
Cook sandwich
Heat a heavy skillet or nonstick pan over medium-low to medium heat for 1–2 minutes. Place the assembled sandwich in the skillet. Cook gently for 3–4 minutes until the bottom is golden brown and the cheese begins to melt. Press lightly with a spatula to ensure contact. Flip the sandwich and cook the other side 2–4 minutes until golden brown and cheese is fully melted. If the bread is browning before the cheese melts, reduce heat to low and cover the pan with a lid for 1–2 minutes to trap heat and finish melting.
Rest and serve
Remove the sandwich to a cutting board and let rest 1 minute to set the cheese. Slice in half diagonally or down the middle. Serve immediately. Optional: serve with ketchup, a simple green salad, or a cup of tomato soup.
