Method
General Prep
Bring ingredients to ready
Remove eggs from refrigerator 5–10 minutes before cooking so they come slightly toward room temperature for more even cooking. Have salt and pepper measured and butter ready.
Fried Eggs (Sunny-side or Over-easy/Medium/Hard)
Preheat pan
Place a nonstick or well-seasoned skillet over medium heat. Add 1 tablespoon unsalted butter and let it melt and foam but not brown (about 1 minute). If you prefer, use 1 teaspoon neutral oil plus butter for higher-heat cooking.
Crack and cook
Crack eggs into a small bowl one at a time to check for shells, then gently slide them into the skillet, spacing them slightly apart. Sprinkle a pinch of salt and a little black pepper over each egg.
Sunny-side
For sunny-side up, reduce heat to medium-low, cover the pan with a lid for 1–2 minutes to set the whites while keeping yolks runny. Cook 2–3 minutes total until whites are fully set but yolks are soft.
Over-easy / Over-medium / Over-hard
For over-style eggs, cook until edges of whites are set (about 2 minutes), gently flip each egg with a thin spatula. Cook over-easy 15–20 seconds for very runny yolk; over-medium 45–60 seconds for slightly set yolk; over-hard 1.5–2 minutes until yolk is fully firm. Season to taste.
Scrambled Eggs
Beat eggs
Crack both eggs into a small bowl. Add 1/8 tsp of the salt and a pinch of pepper. Whisk vigorously until yolks and whites are fully combined and slightly frothy (about 20–30 seconds).
Cook
Heat a nonstick skillet over medium-low and add 1 tablespoon butter. When melted and foaming, pour in beaten eggs. Let eggs sit undisturbed for 10–15 seconds until edges begin to set. Using a silicone spatula, gently push eggs from edges toward the center, forming soft curds. Continue folding every 10–15 seconds until eggs are mostly set but still slightly glossy — about 1.5–2 minutes total.
Poached Eggs
Heat water
Fill a wide shallow saucepan with about 3–4 cups (700–950 ml) of water and bring to a gentle simmer (small bubbles), not a rolling boil. Add 1 tablespoon vinegar if desired to help whites coagulate (optional, not in ingredients list).
Serving & Notes
Choose the method above that matches the requested "any style". All ingredients listed are used in the corresponding method: eggs plus salt and pepper always; butter or optional oil for pan methods; optional garnishes as desired. Serve immediately for best texture. Estimated cooking times vary by method as noted.
