Grilled Cheese Sandwich

Prepare the Sandwich

Butter one side of each slice of bread.

Assemble the Sandwich

Place one slice of bread, butter-side down, on a skillet. Add two slices of cheddar cheese on top, then place another slice of bread on top, butter-side up.

Grill the Sandwich

Heat the skillet over medium heat. Grill the sandwich for about 3-4 minutes until the bottom is golden brown, then flip it over and grill the other side for another 3-4 minutes until the cheese is melted and the bread is golden.

Serve

Remove the sandwich from the skillet, cut it in half, and serve warm.

Sauté the Vegetables

In a pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for an additional 1 minute.

Add the Tomatoes and Broth

Stir in the canned diced tomatoes, vegetable broth, dried basil, salt, and pepper. Bring the mixture to a boil.

Simmer the Soup

Reduce heat to low and let simmer for about 15 minutes to allow the flavors to meld.

Blend the Soup

Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a blender in batches.

Serve

Ladle the soup into bowls and serve hot alongside the grilled cheese sandwich.
