Prepare the Shrimp
In a pot of boiling salted water, add the peeled and deveined shrimp. Cook for about 2-3 minutes until they turn pink and opaque. Drain and cool. Once cooled, chop them into bite-sized pieces.
Combine Ingredients
In a large mixing bowl, combine the Gulf Coast crab meat, chopped shrimp, cocktail sauce, diced avocado, and pico de gallo. Mix gently to avoid breaking the avocado.
Season the Mixture
Add the lime juice and salt to taste. Gently fold in the chopped cilantro, ensuring everything is well mixed.
Serve
Chill the campechana in the refrigerator for at least 30 minutes before serving. Serve it in a bowl with additional lime wedges and tortilla chips on the side.
